Change of Properties of Bioproducts During Drying

Drying of bioproducts is a complex technological process which involves removal of water from the products of different physico-chemical, structural and biological properties. During drying, change of properties can take place thus influencing the quality of bioproducts. It depends on the temperature, moisture content, time of drying and the composition of bioproducts.
