Abstract:

In the paper, the principle of thermal sterilization was presented and advantages of the continuous method application over the batch one were emphasized. The need for choosing a heat transfer method and the possibility of its application in the thermal processing of fermentation media were analyzed. A procedure for implementing the continuous thermal sterilization of media in Polish industry was proposed.
