Genetic determinants of lactic acid bacteria metabolism

This review describes genetic determinants responsible for industrially important features of lactic acidbacteria.Special attention has been paid to plasmids that direct lactose metabolisms, oroteolytic activity, citratemetabolisms, bacteriocin production and bacteriophage resistance.
