Abstract:

The paper reviews study of levan synthesis with bacterial enzymes. The following main subjects are discussed 1) levan description (molecular weight, fructans as substrate in depolymerisation reaction) 2) systematic and profile of bacterial levansucrases (substrate specificity, kinetic of transfructosylation reaction, effects of various agents on synthesis of levan, secretion mechanism and isolation of levansucrase, in vivo and in vitro efficiency of levan production process).
