Abstract:

This paper summarizes the possibilities of applying higher fungi and yeasts as a potential source feed,food and substrates for food production including ligninocellulosic waste materials as a medium in shallowstationary and submerged furigal cultures. The affect of medium constituents and growth conditions onquality of fungal biomass and products is discussed. The paper also describes the chemical structure ofligninocellulosic materials and their degradation mechanisms by microorganisms and enzymes.
