Date issued/created: Subject and Keywords: Abstract:The contemporary process of ethanol production utilizes a group of additional enzymes besides the traditionally used, necessary for production amylases. Among them, one may find such enzymatic activities as proteases, xylanases, p-glucanases or pullulanases. There exist reasonable causes to also include phytases in this group. Phytin is a specific substance of plant origin, built on a scaffold created by phytic add, which interacts with a number of plant constituents like proteins, starch or ions of chosen metals. Enzymatic degradation of phytin during the initial steps of feedstock processing (mashing) might potentially enhance various features of ethanol production process.
