Among them, one may find such enzymatic activities as proteases, xylanases, p-glucanases or pullulanases. There exist reasonable causes to also include phytases in this group. Phytin is a specific substance of plant origin, built on a scaffold created by phytic add, which interacts with a number of plant constituents like proteins, starch or ions of chosen metals.
